Sweet treats continue to cheer Cantabrians enduring the earth- quake. The latest batch of 41 fruit cakes and 89 snack packs were sent on March 4. I know there are more to be collected and cakes in the oven as we speak, so we will keep sending as long as they keep rolling in,'' cake for the quake organiser Pip Foote of Kaukapakapa says. Mrs Foote says the troops are just waiting for their arrival and there's no problem with distribution once they get there. The clean-up job has only just begun and your cakes and snack packs will be distributed to the stayers and those in need.'' Mrs Foote also thanks contributors of packag- ing, courier post stickers, cash for goods and post- age, collection of cakes in their area and courier companies. Mrs Foote says fruit cakes travel a lot better than other fresh goods and they provide a touch of home comfort to recipients. She was inspired after talking to friend Sharon Waller of South Head, who planned on baking fruit cakes with a friend to send down. Mrs Foote's sister Lizzie, who lives in Christchurch, offered a delivery base. Kaukapakapa's rural delivery postie Carol Whitelaw is also helping organise collection and delivery. Little snack packs for workers and volunteers are also appreciated. . Fruit cakes should be wrapped in greaseproof paper and put in a resealable bag. Pip's Rich Fruit Cake Ingredients: 6oz (165g) butter, 2 tablespoons golden syrup, 1 tin sweetened condensed milk, 2 tsp essence --- vanilla, almond or rum, 4 eggs, 2 cups flour, 1 tsp baking soda dissolved in 1 cup warm milk, 12oz (440g) can crushed pine- apple drained really well, excess juice squeezed out, 3lb mixed fruit or 1kg bag of mixed fruit with 400g bag sul- tanas Method: Melt together butter, golden syrup, condensed milk and essence of your choice. Beat 4 eggs and add to slightly cooled melted mixture above. In a large separate bowl place mixed fruit, well-drained pineapple, melted wet ingredients, sifted flour and baking soda dissolved in milk. Mix all ingredients thoroughly. (Mixture ap- pears wet, but no need to add more flour.) Line large cake tin with baking paper or use a 23cm square tin. Bake at 120 deg C for 4 hours. Betty McLeod's Custard Cake (Provided by Dianne McLeod of South Head.) Ingredients: Two large breakfast cups of flour, 1 small cup sugar (brown or white), 2 tsp baking soda, 1 small tsp salt, 2lb (900g) mixed fruit, 1lb (450g) butter, 2 large eggs, 1/2 pint (300ml) milk, 1 tsp each essence --- lemon, almond, vanilla, rum butter Method: Rub butter into dry ingredients of flour, sugar, salt, baking soda and fruit. Let it stand overnight. In the morn- ing boil milk and pour into the well-beaten eggs. Add the essences to this and then mix with the dry ingredients. Put in an 20cm square tin lined with 2 layers of baking paper. Bake in a moderate oven 275 deg F for 2 hours, or about 130 deg C fan bake.
