Photos: CAROLYN THOMAS By CAROLYN THOMAS Organic farming: John Walter helps rear, milk and look after the goats, which are treated as family pets. Cheesemaker Jan Walter loves her job. Milking doesn't start until 8am, her workplace is next door and she gets to creates new things every day. The Taupaki resident's enthusiasm showed when her goats milk feta won its category in the Cuisine New Zealand Champions of Cheese Awards this month. The transformation from milk to cheese is magical,'' Jan says. By 5pm you have some- thing you can actually hold in your hand.'' She and husband John moved to their Taupaki Rd property in 2009 and converted a shed to a cheese making kitchen, ripening area and retail shop. Her cheese making started 11 years ago when the couple lived in Albany. A few goats for a household supply of milk has grown to about 35 stock across three breeds. Quite frankly we were freighted by the size of a cow,'' she says. So many people asked if we'd do cheese, so in the end we thought we'd give it a go.'' She now makes 13 varieties of cheese including blue, haloumi, ricotta, creamy, farmhouse and mature. A speciality is her Farm- house Sting -- a cheese marbled with nettle leaves which are grown on the prop- erty. We started making blue after we moved here, she says. We named it Taupaki Blue after that.'' Chevrolait, a soft and creamy French style cheese, is named for the classic cars that were previously housed in the shed. Jan and John are both for- mer teachers. GUIDE TO GOAT MILKING Jan's cheese making process starts with milking which is done twice a day. Each goat produces between 3 and 10 litres per day. She says goats milk is naturally homogenised so the next step is pasturisation, which is compulsory in New Zealand for cheesemaking. She says it is done as slowly and coolly as possible. A starter is blended in and the mixture is left for a bit before rennet is added and it once again is left to set. Jan says some cheeses will be ready the next day while others will take up to two years to mature. About 4kg of cheese is produced daily and is mainly sold to hotels, restaurants and in the shop front. She says people are often surprised when they taste the cheese.
